Ingredients
- Two large eggs
- 1 1/2 teaspoons vanilla extract
- 1/2 cup rainbow sprinkles
- 1 cup granulated sugar
- 1/2 cup unsalted butter, room temp
- 1/2 cup whole milk
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder

- Prep Time: 15 minutes
- Cook Time: 20 minutes
- Total Time: 35 minutes
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Cupcake liners should be used to line a muffin tin.
- In a medium mixing bowl, combine the flour, sugar, baking powder, and salt.
- In a large mixing bowl, cream the butter until smooth.
- Beat in the eggs one at a time, beating thoroughly after each addition.
- In three additions, add the dry ingredients to the butter mixture, alternating with the milk and vanilla extract.
- Mix until everything is just combined.
- Incorporate the rainbow sprinkles.
- Fill the prepared cupcake liners about 2/3 full with the batter.
- 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
- Cool for 5 minutes in the pan before transferring to a wire rack to cool completely.
