Instructions

  • Preheat the oven to 350°F (180°C) and prepare a muffin tin with cupcake liners.
  • Combine the flour, walnuts, baking powder, baking soda and salt in a medium mixing bowl.
  • In a separate large mixing bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, beating thoroughly after each addition.
  • Mix until just combined, then gradually add the dry ingredients to the wet ingredients, alternating with the milk.
  • Fold in the raspberries and gooseberries gently.
  • Divide the batter among the cupcake liners in an even layer.
  • 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
  • Before serving, let the cupcakes cool completely.
