Lemon Cupcakes are light and fluffy, with a tangy lemon flavor. They are the perfect treat for any occasion because they are topped with a colorful teal and purple icing and sprinkles.

Instructions

  • Preheat the oven to 350°F (180°C) and prepare a muffin tin with cupcake liners.
  • Whisk together the flour, baking powder, baking soda and salt in a medium-sized mixing bowl until well combined.
  • Cream together the softened butter and granulated sugar in a separate mixing bowl until light and fluffy.
  • One at a time, add the eggs, beating well after each addition.
  • Incorporate the lemon zest and fresh lemon juice.
  • Mix in the dry ingredients gradually, alternating with the buttermilk and vegetable oil, until just combined.
  • Divide the batter evenly among the cupcake liners, about 2/3 full.
  • Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
  • Allow the cupcakes to completely cool before preparing the icing.
  • Whisk together the powdered sugar, softened butter, milk, and vanilla extract in a small mixing bowl until smooth and creamy.
  • Divide the icing into two small bowls and color one with teal and the other with purple food coloring.
  • Pipe the icing onto the cooled cupcakes with a piping bag, alternating between the two colors and creating a swirled effect.
  • Sprinkle sprinkles on top of each cupcake for a festive touch.
