Instructions

  • Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).

  • In a medium mixing bowl, combine the flour, baking powder, baking soda and salt.
  • In a large mixing bowl, cream together the butter and sugar with an electric mixer until light and fluffy.
  • One at a time, beat in the eggs, then stir in the vanilla extract.
  • Mix in the dry ingredients gradually, alternating with the milk, until just combined.
  • Fill each muffin cup about two-thirds full with the batter.
  • Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
  • Allow the cupcakes to completely cool before icing them.
  • To make the icing, cream the butter and sugar together with an electric mixer until light and fluffy.
  • Mix in the powdered sugar gradually, followed by the milk and vanilla extract.
  • The icing should be smooth and creamy.
  • Using a knife or a piping bag, apply the icing to the cooled cupcakes.
  • Before serving, decorate the cupcakes with rainbow sprinkles.
