Chocolate Cupcakes with Buttercream Icing Recipe

Ingredients

2 cups powdered sugar
1 cup warm water
1/2 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon baking soda
1/3 cup cocoa powder (unsweetened)
1/2 cup unsalted butter, room temp
1 teaspoon vanilla extract
1/3 cup vegetable oil
1 tablespoon white vinegar
1 1/2 cups all-purpose flour
1 cup granulated sugar
1-2 tablespoons heavy cream or milk

Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes

Instructions

Preheat the oven to 350 degrees Fahrenheit.
Cupcake liners should be used to line a muffin tin.
Whisk together the flour, sugar, cocoa powder, baking soda and salt in a large mixing bowl.
To the dry ingredients, add the warm water, vegetable oil, vanilla extract, and white vinegar.
Mix until smooth and well combined.
Fill the cupcake liners about two-thirds full with batter.
Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
Make the buttercream icing while the cupcakes are cooling.
Beat the butter in a large mixing bowl until smooth and creamy.
Mix in the powdered sugar and vanilla extract until thoroughly combined.
One tablespoon at a time, add the heavy cream or milk until the icing reaches the desired consistency.
Once the cupcakes have completely cooled, pipe or spread the icing on top.
