Instructions

  • Preheat the oven to 350°F (180°C) and prepare a muffin tin with cupcake liners.
  • In a medium mixing bowl, combine the flour, baking powder, baking soda and salt.
  • Cream the butter and sugar together in a large mixing bowl until light and fluffy.
  • Beat the egg into the butter mixture until well combined.
  • Gradually stir in the flour mixture, alternating with the milk and vanilla extract, until well combined.
  • Fold in the pureed strawberries until well combined.
  • Bake for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
  • Allow the cupcakes to completely cool before frosting them.
  • To make the frosting, cream together the softened butter and confectioners' sugar until smooth.
  • Add the powdered sugar, vanilla extract, and heavy cream gradually, beating until light and fluffy.
  • Spread the frosting on top of the cooled cupcakes and serve.
