Chocolate Mint Cupcakes Recipe
These chocolate mint cupcakes are the ideal marriage of rich chocolate and refreshing mint. They'll be a hit at any party or gathering.
Ingredients
- 1 cup buttermilk
- 1 cup granulated sugar
- 1/2 cup cocoa powder (unsweetened)
- 1 teaspoon peppermint extract
- 1/2 cup vegetable oil
- 1/2 cup mini chocolate chips
- 1 teaspoon baking soda
- Two large eggs
- 1/4 tsp salt
- 1 1/2 cups all-purpose flour
Time Needed
- Prep Time: 20 minutes
- Cook Time: 18 minutes
- Total Time: 38 minutes
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin pan with cupcake liners.
- In a medium mixing bowl, combine the flour, cocoa powder, baking soda and salt.
- In a large mixing bowl, combine the sugar, vegetable oil, eggs, and peppermint extract.
- In three parts, add the dry ingredients to the wet ingredients, alternating with the buttermilk and mixing well after each addition.
- Incorporate the mini chocolate chips.
- Spoon the batter into the prepared muffin tin, filling each liner about two-thirds of the way.
- Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
- Allow to cool completely on a wire rack before frosting.
