Instructions

  • Preheat the oven to 350 degrees Fahrenheit and line a muffin pan with paper liners.
  • In a medium mixing bowl, combine the flour, baking powder, baking soda and salt.
  • Separately, in a large mixing bowl, cream the butter and granulated sugar until light and fluffy.
  • One at a time, beat in the eggs, then stir in the vanilla extract.
  • Stir in the flour mixture and milk gradually, alternating between the two and starting and ending with the flour mixture.
  • Incorporate the mini marshmallows.
  • Fill each muffin liner about two-thirds full with the batter from the prepared muffin tin.
  • Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
  • Allow the cupcakes to completely cool before preparing the icing.
  • In a small mixing bowl, combine the confectioners' sugar and milk until smooth.
  • Drizzle the icing over the cooled cupcakes and, if desired, top with additional mini marshmallows.
