Lemon Cupcakes with Icing and Berries Recipe

Lemon cupcakes are a delicious and refreshing treat that are ideal for any occasion. The tangy lemon flavor complements the sweet and creamy icing perfectly, while the mixed berries add a burst of freshness and color.

Instructions

  • Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
  • Cupcake liners should be used to line a muffin tin.
  • In a medium mixing bowl, combine the flour, baking powder, baking soda and salt.
  • In a separate large mixing bowl, cream together the butter and granulated sugar with an electric mixer until light and fluffy.
  • One at a time, beat in the eggs, followed by the milk, lemon juice, and lemon zest.
  • Add the dry ingredients to the wet ingredients gradually, mixing until just combined.
  • Divide the batter evenly among the cupcake liners, filling them about two-thirds full.
  • Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
  • Remove from the oven and set aside to cool completely before icing.
  • In a small mixing bowl, combine the powdered sugar, melted butter, and lemon juice and whisk until smooth.
  • Spread the icing on the cooled cupcakes and top with a few mixed berries.
  • Serve and have fun.
