- Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
- Cupcake liners should be used to line a muffin tin.
- In a medium mixing bowl, combine the flour, baking powder, baking soda and salt.
- In a separate large mixing bowl, cream together the butter and granulated sugar with an electric mixer until light and fluffy.
- One at a time, beat in the eggs, followed by the milk, lemon juice, and lemon zest.
- Add the dry ingredients to the wet ingredients gradually, mixing until just combined.
- Divide the batter evenly among the cupcake liners, filling them about two-thirds full.
- Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
- Remove from the oven and set aside to cool completely before icing.
- In a small mixing bowl, combine the powdered sugar, melted butter, and lemon juice and whisk until smooth.
- Spread the icing on the cooled cupcakes and top with a few mixed berries.
- Serve and have fun.
