Instructions

  • Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
  • Sift together the flour, baking soda and salt in a medium mixing bowl.
  • Cream the butter and granulated sugar together in a large mixing bowl until light and fluffy.
  • Beat in the eggs one at a time, beating thoroughly after each addition.
  • To make a paste, combine the cocoa powder, vanilla extract, and red food coloring in a small bowl.
  • Mix the cocoa mixture into the butter mixture until thoroughly combined.
  • In three parts, add the flour mixture to the butter mixture, alternating with the milk and vinegar.
  • Mix until everything is thoroughly combined.
  • Mix the baking powder and vinegar in a small bowl before adding it to the batter.
  • Combine thoroughly.
  • Line a muffin pan with cupcake liners and fill each liner halfway with batter.
  • Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  • Allow the cupcakes to cool completely after removing them from the oven.
  • In a large mixing bowl, cream the butter until it is smooth.
  • Mix in the powdered sugar and vanilla extract until thoroughly combined.
  • Add just enough milk to make the frosting spreadable.
  • Once the cupcakes have cooled, spread the vanilla icing on top of each one.
