Winter Cupcakes with Snow Frosting Recipe

Winter cupcakes are ideal for the holiday season. The white chocolate chips add sweetness, and the snow frosting gives them a wintery appearance. They are simple to prepare and ideal for sharing with friends and family.

  • Prep Time: 15 minutes
  • Cook Time: 20 minutes
  • Total Time: 35 minutes

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a medium mixing bowl, combine the flour, baking powder, baking soda and salt.
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, beating thoroughly after each addition.
  • Incorporate the vanilla extract.
  • Add the dry ingredients to the butter mixture gradually, alternating with the milk, and mixing until just combined.
  • Incorporate the white chocolate chips.
  • Prepare a muffin pan with paper liners.
  • Fill each liner two-thirds full with batter.
  • Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
  • Cool for 5 minutes in the pan before transferring to a wire rack to cool completely.
  • Heat the heavy cream in a small saucepan over low heat until it begins to simmer.
  • Remove from the heat and smooth in the powdered sugar and vanilla extract.
  • Allow 5 minutes for the frosting to cool.
  • Dip the cupcake tops in the frosting, allowing any excess to drip off.
  • To make snow, sprinkle shredded coconut on top of the frosting.
