Scone Cupcakes with Vanilla and Chocolate Icing Recipe

Instructions

  • Preheat the oven to 375°F (190°C).
  • Whisk together the flour, sugar, baking powder, baking soda and salt in a large mixing bowl.
  • With a pastry blender or fork, cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  • Sour cream, egg, and vanilla extract should be whisked together in a separate small mixing bowl.
  • Mix the wet and dry ingredients together until just combined.
  • Incorporate the mini chocolate chips.
  • Fill a muffin tin with paper liners with the batter.
  • Bake the cupcakes for 15-18 minutes, or until a toothpick inserted into the centre comes out clean.
  • While the cupcakes are baking, whisk together powdered sugar, melted butter, milk, and vanilla extract to make the vanilla icing.
  • After the cupcakes have cooled, drizzle with vanilla icing.
  • Next, make the chocolate icing by combining semisweet chocolate chips and heavy cream in a microwave-safe bowl or in a double boiler.
  • When the chocolate has melted, whisk it until smooth before drizzling it over the cupcakes.
  • Allow a few minutes for the icings to set before serving.
