Instructions

  • Preheat the oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  • In a medium mixing bowl, combine the flour, baking powder, and salt.
  • In a large mixing bowl, cream the butter and sugar together for 2-3 minutes, or until light and fluffy.
  • Beat in the eggs one at a time, beating thoroughly after each addition.
  • Incorporate the vanilla extract.
  • Mix in the dry ingredients and milk gradually, alternating between the two, until just combined.
  • Fold in the chopped strawberries gently.
  • Fill each muffin liner about 3/4 of the way full with the batter.
  • Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
  • Allow cupcakes to cool for 5 minutes in the pan before transferring to a wire rack to cool completely.
  • Before serving, dust with powdered sugar.
