Chocolate Cupcake with Berries and Oreo Cookies on Top Recipe

Ingredients

• 1 teaspoon vanilla extract
• 1 teaspoon baking powder
• 1 cup mixed berries, for serving
• 1/2 tsp baking soda
• 1/3 cup cocoa powder (unsweetened)
• For the topping, crush 4 oreo cookies
• 1 cup granulated sugar
• 1/2 cup whole milk
• 1 1/2 cups all-purpose flour
• 1/2 cup unsalted butter, softened
• Two large eggs
• 1/2 tsp salt

Time Needed

• Prep Time: 15 minutes
• Cook Time: 20 minutes
• Total Time: 35 minutes

Instructions

• Preheat the oven to 350 degrees Fahrenheit and line a cupcake pan with paper liners.
• Whisk together the flour, cocoa powder, baking powder, baking soda and salt in a medium mixing bowl.
• In a large mixing bowl, cream together the butter and sugar until light and fluffy.
• Add the eggs one at a time, thoroughly mixing after each addition.
• Incorporate the vanilla extract.
• Gradually stir in the flour mixture and milk, alternating between the two and beginning and ending with the flour mixture.
• Distribute the batter evenly among the cupcake liners.
• Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
• Allow the cupcakes to cool completely before decorating with berries and crushed Oreo cookies.
