- Preheat the oven to 350°F (175°C) and prepare a muffin tin with cupcake liners.
- Sift together the flour, cocoa powder, baking powder, baking soda, and salt in a medium mixing bowl.
- Cream the butter and sugar together in a large mixing bowl for 3 minutes, or until light and fluffy.
- Beat in the eggs one at a time, beating thoroughly after each addition.
- Incorporate the vanilla extract.
- In three parts, add the flour mixture, alternating with the milk in two parts, beginning and ending with the flour mixture.
- Mix until everything is just combined.
- Incorporate the boiling water until smooth.
- Divide the batter evenly among the cupcake liners, filling them about two-thirds full.
- Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
- Allow the cupcakes to cool for 5 minutes in the pan before transferring them to a wire rack to cool completely.
- In a medium saucepan, combine the sugar and water and cook, stirring occasionally, over medium-high heat until the sugar has dissolved.
- Allow the mixture to come to a boil without stirring.
- Cook for 5-7 minutes, or until the mixture turns a deep amber color.
- Take the saucepan off the heat and carefully add the heavy cream.
- Be cautious because the mixture will bubble and steam.
- Until smooth, stir in the butter and vanilla extract.
- Allow the caramel sauce to slightly cool.
- In a large mixing bowl, cream the butter until it is light and fluffy.
- Combine the powdered sugar, heavy cream, and vanilla extract in a mixing bowl and whisk until smooth and creamy.
- Using a pastry bag, pipe or spread the frosting onto the cooled cupcakes.
- Drizzle the caramel sauce over the tops of the cupcakes.
