Raspberry Cupcakes Recipe
Raspberry Cupcakes are an ideal sweet treat for any occasion. They're moist, fluffy, and full of raspberry flavor.
Ingredients
- 1/2 cup raspberry puree
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, room temp
- 1 teaspoon vanilla extract
- Two large eggs
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 tsp salt
- 1/2 cup whole milk
Time Needed
- Prep Time: 20 minutes
- Cook Time: 25 minutes
- Total Time: 45 minutes
Instructions
- Preheat the oven to 350°F.
- In a medium mixing bowl, combine the flour, baking powder, and salt.
- In a separate large mixing bowl, cream the butter and sugar together until light and fluffy.
- Add the eggs one at a time, thoroughly mixing after each addition.
- Mix in the milk and vanilla extract until well combined.
- Slowly combine the dry and wet ingredients, mixing until just combined.
- Incorporate the raspberry puree.
- Line a muffin tin with cupcake liners and fill each liner halfway with batter.
- 20-25 minutes, or until a toothpick inserted into the centre comes out clean.
- Allow cupcakes to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
