Pink Maraschino Cherry Cupcakes Recipe

• 1 3/4 cups all-purpose flour
• 1/2 cup unsalted butter, softened
• 1 cup granulated sugar
• 1/2 cup milk
• 1/2 cup maraschino cherry juice
• 1/2 tsp salt
• 2 teaspoon vanilla extract
• 1/2 tsp baking soda
• 1/2 cup finely chopped maraschino cherries
• Two large eggs
• 2 tsp baking powder
• 1/4 cup cornflour

Time Needed

• Prep Time: 15 minutes
• Cook Time: 25 minutes
• Total Time: 40 minutes

Instructions

• Preheat the oven to 350°F.
• Use paper liners to line a 12-cup muffin tin.
• Cream together the butter and sugar in a large mixing bowl until light and fluffy.
• Incorporate the eggs and vanilla extract.
• Whisk together the flour, cornstarch, baking powder, baking soda and salt in a separate bowl.
• Mix the dry ingredients into the wet mixture gradually.
• Mix in the maraschino cherry juice and milk.
• Mix in the chopped cherries.
• Fill the muffin cups about two-thirds full with batter.
• 20-25 minutes, or until a toothpick inserted into the centre comes out clean.
• Cool for 5 minutes in the pan before transferring to a wire rack to cool completely.
