Lemon Cupcakes with Icing and Pearl Sprinkles Recipe

These lemon cupcakes are light and fluffy, with a strong lemon flavor. The tangy icing and delicate pearl icing complete the look.

  • Total Time: 40 minutes

Instructions

  • Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  • Prepare a cupcake pan by lining it with paper liners.
  • In a medium mixing bowl, combine the flour, baking powder, baking soda and salt.
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy, about 2-3 minutes.
  • Beat in the eggs one at a time, beating thoroughly after each addition.
  • Mix in the lemon juice and zest.
  • Alternately add the flour mixture and the milk, beginning and ending with the flour mixture.
  • Mix until everything is just combined.
  • Distribute the batter evenly among the cupcake liners.
  • 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
  • Allow to cool for 5 minutes in the pan before transferring to a wire rack to cool completely.
  • To make the icing, cream the butter until it is light and fluffy.
  • Mix in the powdered sugar gradually, alternating with the lemon juice and milk, until the icing is smooth and creamy.
  • Spread or pipe the icing onto the cooled cupcakes and sprinkle with pearl sprinkles to finish.
