Instructions

  • Preheat the oven to 350°F (180°C) and line a muffin pan with cupcake liners.
  • In a medium mixing bowl, combine the flour, baking powder, baking soda and salt.
  • In a separate large mixing bowl, cream together the butter and sugar until light and fluffy, about 2-3 minutes.
  • One at a time, add the eggs, beating well after each addition.
  • Incorporate the vanilla extract.
  • In three additions, gradually mix in the dry ingredients, alternating with the milk, beginning and ending with the dry ingredients.
  • Mix until everything is thoroughly combined.
  • Take care not to overmix.
  • Divide the batter evenly among the cupcake liners, filling them about two-thirds full.
  • Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
  • Allow to cool completely before frosting with your favourite assortment of frostings.
