Vanilla Cupcakes with Icing, Strawberries and Cinnamon Recipe

These moist, fluffy vanilla cupcakes are bursting with juicy strawberries and a hint of warm cinnamon. They are the ideal dessert for any occasion, topped with a creamy vanilla icing and fresh strawberries.

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • Cupcake liners should be used to line a 12-cup muffin tin.
  • In a medium mixing bowl, combine the flour, baking powder, baking soda and salt.
  • In a separate large mixing bowl, cream together the granulated sugar and unsalted butter for 2 minutes, or until light and fluffy.
  • Beat in the egg until well combined.
  • In three parts, add the dry ingredients to the wet ingredients, alternating with the milk and vanilla extract, starting and ending with the dry ingredients.
  • Stir in the sliced strawberries and cinnamon.
  • Scoop the batter into the prepared muffin cups, filling them about two-thirds full.
  • Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
  • Allow to cool completely on a wire rack after removing from the oven.
  • Whisk together the confectioners' sugar, unsalted butter, milk, and vanilla extract in a small bowl until smooth.
  • Spread the icing over the cooled cupcakes and top with more sliced strawberries and cinnamon, if desired.
