Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Cupcake liners should be used to line a 12-cup muffin tin.
- In a medium mixing bowl, combine the flour, baking powder, baking soda and salt.
- In a separate large mixing bowl, cream together the granulated sugar and unsalted butter for 2 minutes, or until light and fluffy.
- Beat in the egg until well combined.
- In three parts, add the dry ingredients to the wet ingredients, alternating with the milk and vanilla extract, starting and ending with the dry ingredients.
- Stir in the sliced strawberries and cinnamon.
- Scoop the batter into the prepared muffin cups, filling them about two-thirds full.
- Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
- Allow to cool completely on a wire rack after removing from the oven.
- Whisk together the confectioners' sugar, unsalted butter, milk, and vanilla extract in a small bowl until smooth.
- Spread the icing over the cooled cupcakes and top with more sliced strawberries and cinnamon, if desired.
