These mini chocolate cupcakes are ideal for any occasion. A creamy vanilla frosting and mini chocolate chips top the moist chocolate cake.

  • Cook Time: 10 minutes
  • Total Time: 30 minutes

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • Fill a mini muffin pan halfway with paper liners.
  • Whisk together the flour, cocoa powder, baking powder, baking soda and salt in a medium mixing bowl.
  • Whisk together the granulated sugar, vegetable oil, egg, buttermilk, and vanilla extract in a separate bowl until smooth.
  • Mix the wet and dry ingredients together until just combined.
  • Incorporate the mini chocolate chips.
  • Fill each muffin cup halfway with the batter.
  • Bake for 10 to 12 minutes, or until a toothpick inserted into a cupcake comes out clean.
  • Make the frosting while the cupcakes are cooling.
  • In a large mixing bowl, cream the unsalted butter until smooth.
  • Gradually beat in the confectioners' sugar until light and fluffy.
  • Combine the vanilla extract and milk in a mixing bowl.
  • Once the cupcakes have completely cooled, apply the vanilla frosting.
