Instructions

  • Preheat the oven to 350°F (175°C) and prepare a muffin tin with cupcake liners.
  • In a medium mixing bowl, combine the flour, cocoa powder, baking soda and salt.
  • In a separate large mixing bowl, combine the sugar, oil, eggs, and vanilla extract.
  • Mix in the dry ingredients until just combined, then add the milk gradually until the batter is smooth.
  • Fill each cupcake liner two-thirds of the way with batter.
  • Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
  • Remove from the oven and cool for 5 minutes in the tin before transferring to a wire rack to cool completely.
  • Make the icing while the cupcakes cool by melting the butter in a saucepan over medium heat.
  • Whisk in the cocoa powder until smooth, then add the confectioners' sugar, milk, and vanilla extract gradually until the icing is smooth and glossy.
  • Decorate the cooled cupcakes with the icing and sprinkles.
