Peanut Butter Cupcakes with Peanuts and Icing Recipe

Peanut Butter Cupcakes are ideal for any peanut butter fan. They're soft and fluffy, with a delicious peanut butter flavor and crunchy roasted peanut texture. The creamy, sweet peanut butter icing is the finishing touch.

  • Cook Time: 20 minutes
  • Total Time: 35 minutes

Instructions

  • Preheat the oven to 350°F.
  • Whisk together the flour, sugar, baking powder, baking soda and salt in a large mixing bowl.
  • In a separate bowl, combine the peanut butter, milk, vegetable oil, and egg.
  • Stir the wet and dry mixtures together until just combined.
  • Mix in the chopped peanuts.
  • Fill a muffin tin with cupcake liners with the batter.
  • Bake for 18-20 minutes, or until a toothpick inserted into the centre of the cake comes out clean.
  • Allow to completely cool on a wire rack.
  • In a mixing bowl, cream butter until light and fluffy.
  • Beat in the powdered sugar, peanut butter, milk, and vanilla extract until smooth and creamy.
  • Icing should be piped or spread onto cooled cupcakes.
  • Add more chopped peanuts if desired.
  • Serve and have fun.
