These Vanilla Cupcakes with Pink Icing are a traditional sweet treat that are suitable for any occasion. The fluffy vanilla cake is topped with a creamy and sweet pink icing that will satisfy your sweet tooth.

Instructions

  • Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius) and line a cupcake pan with paper liners.
  • In a medium mixing bowl, combine the flour, baking powder, baking soda and salt.
  • Cream the butter and sugar together in a large mixing bowl until light and fluffy, then add the eggs one at a time, beating well after each addition.
  • Incorporate the vanilla extract.
  • In three parts, add the dry ingredients to the butter mixture, alternating with the milk and beginning and ending with the dry ingredients.
  • Bake for 18-20 minutes, or until a toothpick inserted into the centre comes out clean, in the prepared cupcake liners.
  • On a wire rack, cool the cupcakes completely.
  • To make the frosting, cream together the powdered sugar and butter until light and fluffy.
  • Blend in the milk, vanilla extract, and pink food coloring until smooth.
  • Frost the cooled cupcakes however you like.
