Mint Chocolate Cupcakes Recipe

These mint chocolate cupcakes are ideal for any occasion. Moist chocolate cake with fresh mint leaves and chocolate chips is topped with a creamy and minty frosting that is sure to please. Make some of these cupcakes for your next party or special occasion.

  • Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
  • Whisk together the flour, sugar, cocoa powder, baking soda and salt in a large mixing bowl.
  • Mix in the vegetable oil, vanilla extract, white vinegar, and water until smooth.
  • Fold in the chocolate chips and chopped fresh mint leaves.
  • Line a cupcake pan with paper liners and fill each liner about two-thirds of the way with batter.
  • Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
  • Remove the cupcakes from the oven and place them on a wire rack to cool completely.
  • Make the frosting while the cupcakes are cooling.
  • In a large mixing bowl, cream the butter until smooth.
  • Add the powdered sugar, milk, peppermint extract, and green food coloring gradually, beating until the frosting is smooth and creamy.
  • When the cupcakes are cool enough to handle, frost them with the mint frosting and top with additional chopped fresh mint leaves and chocolate chips, if desired.
