• 1/2 cup cocoa powder (unsweetened)
• 1/3 cup vegetable oil
• 1 tablespoon white vinegar
• 1 1/2 cups all-purpose flour
• 1/4 cup heavy cream
• 1 cup granulated sugar
• 1 teaspoon baking soda
• 2 tbsp unsalted butter, at room temp
• 1 cup water
• 1 teaspoon vanilla extract
• Green food coloring
• 1 cup powdered sugar
• 1/2 teaspoon vanilla extract

Instructions

• Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
• Whisk together the flour, sugar, cocoa powder, baking soda and salt in a large mixing bowl.
• To the dry ingredients, whisk in the vegetable oil, vanilla extract, white vinegar, and water until smooth.
• Divide the batter evenly among 12 muffin cups that have been lined.
• Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
• Allow the cupcakes to cool completely before icing.
• In a mixing bowl, combine the powdered sugar, butter, vanilla extract, and heavy cream until smooth.
• Mix in the green food coloring to achieve the desired shade.
• Enjoy the cupcakes with icing.
