Pink Cupcakes with Sprinkles Recipe

Ingredients

• 1/2 tsp vanilla extract
• Two large eggs
• 1/4 tsp baking soda
• 1/4 tsp salt
• Pink food coloring
• 1/2 cup unsalted butter, room temp
• 1/2 cup sprinkles
• 1 1/2 cups all-purpose flour
• 1 teaspoon baking powder
• 1/2 cup buttermilk
• 1 cup granulated sugar

Instructions

• Preheat the oven to 350 degrees Fahrenheit and line a muffin pan with cupcake liners.
• In a medium mixing bowl, combine the flour, baking powder, baking soda and salt.
• In a large mixing bowl, cream together the butter and sugar until light and fluffy.
• Beat in the eggs one at a time, beating thoroughly after each addition.
• Incorporate the vanilla extract.
• Add the dry ingredients to the butter mixture in a slow, steady stream, alternating with the buttermilk and mixing until just combined.
• Add a few drops of pink food coloring to achieve the desired shade.
• Incorporate the sprinkles.
• Distribute the batter evenly among the cupcake liners.
• Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
• Remove the cupcakes from the oven and cool for 5 minutes in the pan before transferring to a wire rack to cool completely.
