Instructions

  • Preheat the oven to 350°F (175°C) and line a muffin pan with paper liners.
  • In a large mixing bowl, combine the flour, sugar, cocoa powder, baking soda and salt.
  • Stir in the vegetable oil, vanilla extract, white vinegar, and cold water until just combined.
  • Stir in the dark chocolate chips.
  • Fill the muffin cups about two-thirds full with the batter.
  • Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
  • Remove the cupcakes from the oven and cool completely before frosting.
  • In a large mixing bowl, cream the softened butter until creamy.
  • Gradually beat in the confectioners' sugar, milk, and vanilla extract until smooth and fluffy.
  • Spread the icing on top of the cooled cupcakes and top with colorful sprinkles.
