Chocolate Cupcakes with White Chocolate Chips Recipe

Ingredients

1/2 cup granulated sugar
Two large eggs
1 cup all-purpose flour
1/2 cup vegetable oil
1/2 cup buttermilk
1/2 cup cocoa powder (unsweetened)
1/2 tsp baking soda
1/2 cup white chocolate chips
1 teaspoon baking powder
1/4 tsp salt
1 teaspoon vanilla extract

Cook Time: 20 minutes
Total Time: 35 minutes

Instructions

Preheat the oven to 350 degrees Fahrenheit.
Whisk together the flour, cocoa powder, baking powder, baking soda and salt in a medium mixing bowl.
In a large mixing bowl, combine the sugar and vegetable oil.
Whisk in the eggs and vanilla extract until well combined.
In three parts, add the dry ingredients to the wet ingredients, alternating with the buttermilk, and whisk until just combined.
Incorporate the white chocolate chips.
Prepare a muffin pan with paper liners.
Divide the batter among the muffin cups in an even layer.
Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
Remove the cupcakes from the oven and cool for 5 minutes in the pan.
Place the cupcakes on a cooling rack to cool completely.
