Vanilla Cupcake with Yellow, Purple and Teal Icing Recipe

The icing on these vanilla cupcakes is three different colors: yellow, purple, and teal. The cupcakes are fluffy and moist, with a smooth and creamy frosting.

Instructions

  • Preheat the oven to 350 degrees Fahrenheit and line a cupcake pan with cupcake liners.
  • Whisk together the flour, sugar, baking powder, baking soda and salt in a large mixing bowl.
  • Whisk in the vegetable oil, eggs, and vanilla extract until well combined.
  • Continue whisking until the batter is smooth after adding the buttermilk.
  • Divide the batter among three small bowls evenly.
  • Fill one bowl with yellow food coloring, another with purple food coloring, and the last with teal food coloring.
  • In each bowl, stir until the color is well combined with the batter.
  • Scoop the batter into the prepared cupcake liners, filling them about two-thirds full.
  • Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
  • Remove the cupcakes from the oven and cool completely before frosting them.
  • To make the frosting, cream together the softened butter and confectioners' sugar until smooth.
  • Alternate between adding the powdered sugar and milk until the frosting is smooth and creamy.
  • Make three small bowls out of the frosting.
  • Fill one bowl with yellow food coloring, another with purple food coloring, and the last with teal food coloring.
  • In each bowl, stir until the color is well combined with the frosting.
  • Fill a piping bag fitted with a large round tip with each frosting color.
  • Pipe the frosting in any pattern you want onto the cooled cupcakes.
  • Serve and have fun.
