Birthday Cupcake with Vanilla Icing Recipe

These cupcakes are the ideal treat for a birthday party. The vanilla icing is sweet and creamy, and it complements the fluffy vanilla cupcakes perfectly.

Instructions

  • Preheat the oven to 350°F.
  • Cupcake liners should be used to line a cupcake pan.
  • In a medium mixing bowl, combine the flour, baking powder, and salt.
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each.
  • Mix in the vanilla extract.
  • Add flour mixture in three parts, alternating with milk and beginning and ending with flour mixture, beating until just combined after each addition, until just combined.
  • Fill cupcake liners about two-thirds full with batter.
  • Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
  • Cool cupcakes in the pan for 5 minutes before removing to a wire rack to cool completely.
  • In a large mixing bowl, cream butter until smooth.
  • Mix in the confectioners' sugar gradually until well combined.
  • One tablespoon at a time, beat in milk until desired consistency is reached.
  • Mix in the vanilla extract.
  • Cupcakes should be frosted with vanilla icing and decorated as desired.
