Instructions

  • Preheat the oven to 350°F.
  • Fill a mini cupcake pan halfway with paper liners.
  • Cream the butter and sugar together in a large mixing bowl until light and fluffy.
  • One at a time, add the eggs, beating well after each addition.
  • Incorporate the vanilla extract.
  • Whisk together the flour, baking powder, baking soda and salt in a separate bowl.
  • In three parts, add the dry ingredients to the butter mixture, alternating with the milk and lemon juice, beginning and ending with the dry ingredients.
  • Add the lemon zest and mix well.
  • Fill each paper liner about two-thirds full with batter.
  • 12-15 minutes, or until a toothpick inserted into the centre comes out clean.
  • Allow the cupcakes to cool completely before frosting them.
  • In a large mixing bowl, cream the butter until it is creamy.
  • Combine the powdered sugar, vanilla extract, and 1 tablespoon milk in a mixing bowl.
  • Blend until the mixture is smooth and creamy.
  • Add another tablespoon of milk if the icing is too thick.
  • Serve the cooled cupcakes with the vanilla icing.
