Instructions

  • Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius) and line a 12-cup muffin pan with paper liners.
  • In a medium mixing bowl, combine the flour, baking powder, baking soda, and salt.
  • In a large mixing bowl, cream the butter and sugar together with an electric mixer until light and fluffy, about 3 minutes.
  • Beat in the eggs one at a time, beating thoroughly after each addition.
  • Mix in the orange juice, milk, orange zest, and vanilla extract until thoroughly combined.
  • Add the dry ingredients to the wet ingredients in a slow, steady stream until just combined.
  • Fill each muffin cup about two-thirds full with the batter.
  • Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cupcakes to cool for 5 minutes in the pan before transferring them to a wire rack to cool completely.
  • To make the icing, combine the powdered sugar, orange juice, and orange zest in a mixing bowl and whisk until smooth.
  • When the cupcakes have completely cooled, spread the icing on top of each one and serve.
