Honey Wafer Cupcakes Recipe

These honey wafer cupcakes are a tasty and sweet treat. The honey wafers give the soft, fluffy cupcakes a delightful crunch.

  • Cook Time: 20 minutes
  • Total Time: 40 minutes

Instructions

  • Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
  • Prepare a muffin pan with paper liners.
  • In a medium mixing bowl, combine the flour, cornflour and salt.
  • Cream the butter and sugar together in a large mixing bowl until light and fluffy.
  • Add the eggs one at a time, followed by the honey, milk, and vanilla extract.
  • Mix the dry ingredients into the wet ingredients until they are just combined.
  • Incorporate the crushed honey wafers.
  • Fill each muffin cup halfway with batter.
  • Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
  • Cool for 5 minutes in the pan before transferring to a wire rack to cool completely.
